Easy Healthy breakfast – Crepes!
For a modern working lady with kids, the daily morning ritual is super-packed. In the tight schedule if you are forced to think of breakfast options it surely raise your blood-pressure. Husband and children will never have the same choice. And to bring smiles on your dining table early in the morning is definitely a challenge. I recommend experimenting with the basic essentials in your kitchen. Give the dish a fancy name and see the family running towards the dining table.
Healthy Pancakes / Crepes
Spicy Moong Dal crepes
1 cup Moong dal, a pinch of asafoetida, coriander powder, chilli powder and salt to taste, roasted cumin seeds, finely chopped fresh coriander and 1 tsp ginger garlic paste. Soak the moongdal in warm water for 30-45mins before preparation. (you can also soak it overnite in cold water as mornings are usually packed). Blend all the ingredients in a grinder with very little water to a fine dosa-kind batter. Heat a thick pan or a non stick tawa, pour some oil and spread this batter on it. When the edges are golden, turn with a ladle and cook the other side too till golden brown. Garnish it with shredded cheese or paneer and some coriander leaves and serve with Tamarind chutney. The smell and the color of these crepes will surely make you a Master-chef
1 cup wheat / wholewheat atta, 50gm sugar, 2 eggs, milk to make a batter, 25gm melted butter, ½ tsp vanilla essence or cinnamon powder. Take the atta in a bowl, make a well in the center and add egg and half the milk. Stir slowly adding flour from sides to make a thick and smooth batter. Add butter and remaining ingredients and any other seasoning (kesar / elaichi if you like it) Beat the batter for 2-3 minutes. Keep it to rest for 20-30 mins. Heat a thick pan or a non stick tawa, pour some oil and spread this batter on it. When the edges are golden, turn with a ladle and cook the other side too till golden brown. Serve it with Fresh fruits and curd or green chutney.
