Santa Claus is coming to town!
With Christmas being round the corner, how can one forget our childhood favorite, Christmas cake? Given below is a recipe to bake perfect home-made Christmas cakes and woo everyone’s hearts.

1 cup of mixed and chopped dried fruits (cherries, currants, raisins, cranberries, figs, etc)
2 tsp of chopped cashew & almond
1 tsp of Nilons tooty frooty
¼ cup rum (dark)
½ cup Maida
2 pinches of Baking soda
¼ tsp cinnamon powder
¼ tsp of cardamom, nutmeg and clove powder
1 tsp lemon zest
¼ cup of brown sugar
¼ cup of Milk
½ cup of Butter
1 tsp apple cider vinegar
1 tsp vanilla extract
¼ tsp salt

Step 1
In a bowl, mix the chopped dried fruits, Nilons tooty frooty and nuts. Add rum to it and let the combination soak for 24 hours.

Step 2
In a sieve, take the flour (maida), cinnamon powder, cardamom, nutmeg and clove powder along with baking soda and sieve them into a bowl.

Step 3
Add sugar and butter to the flour and mix well.

Step 4
Add the soaked dried fruits and nuts to the flour and any amounts of leftover rum (if any at all) and mix them together.

Step 5
In a small bowl take milk. Add apple cider vinegar to it and let it curdle a bit. Now add baking soda to the curdled milk. The mixture will begin to rise.

Step 6
Pour this mixture into the bowl of flour and add vanilla extract to it. Mix it well till a smooth batter is obtained.

Step 7
In a greased baking pan, pour the mixture and level the top layer with a spoon.

Step 8
Put the cake to be baked in an oven, preheated at 170 degrees, for one hour forty five minutes. Once done, let the cake cool and serve with a smile.
